3 of my Favourite Recipes!

This week I would like to share 3 of my most favourite recipes with you! ENJOY!

Honeycomb Cheesecake

Back in the days when I used to read DOLLY (is that magazine even still around?) me and my best friend loved to cook and we found this recipe among a number of SUMMER TREATS that were in the Dolly magazine, since that moment it has been a family favourite!! It is to die for! And it’s so easy so make sure you try it!

Base:

1 packet of plain biscuits crushed (if you want to experiment you can use any type of biscuit)
75g melted butter
1. Mix melted butter and crushed biscuits together
2. Add more butter if the mixture is still crumbly
3. Line the base of a cheesecake dish with gladwrap and then press mixture into the bowl
4. Put it in the fridge to set

Mixture:

250g  Philadelphia cream cheese
1/2 cup lemon juice (or 2 squeezed lemons)
1 can condensed milk
300ml thickened cream
2 large Crunchie bars broken into chunks – big & small (or you can use anything you want – Mars Bars, Oreos, be creative)
1. Combine cream cheese and lemon juice in a mixer, beat until smooth
2. Add condensed milk, mix through
3. Beat cream separately until thickened
4. Add the cream to the cheese mixture and mix through
5. Stir in Crunchie by hand
6. Pour mixture into biscuit base
7. Put in fridge to set for at least 4 hours
8. Decorate with grated chocolate or whatever you want

Banana Bread

I learnt this recipe from a beautiful woman by the name of Belle! I went to college with her and she used to cook this banana bread for everyone at least once a week, it was a hit! I also used to stay with her once a week when I was travelling up and down for my 3rd year of college and there would always be fresh banana bread waiting for me for breakfast…mmm, I can smell it now! Another EASY recipe which can be  made by hand!

Ingredients:

3 or 4 ripe bananas, mashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of flour

No need for a mixer for this recipe. Preheat the oven to 180 degrees celsius. With a wooden spoon, mix melted butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and  slice to serve.

Peanut Chicken

My best friends mum used to make this recipe all the time and the kids just loved it, now I’m grown up and I still love it! It has become another family favourite!

500g chicken
1 onion finely chopped
clove garlic crushed
30g butter
1/2 crunchy peanut butter
1/2 cup chicken stock
1/4 cup honey
2 tspns grainy mustard
pinch cardamon
1 tspn curry powder
dash of tabasco sauce

Cut chicken into strips, melt butter in frying pan, add onion and garlic – cook
until slightly brown, add chicken for a few mins and then stir in rest of ingredients – let simmer for 20-30 mins…serve with rice and feel free to add vegies!

Serves 4 people
